Rasa-Rasa began with a copper pot, a market list and the smell of cumin hitting hot oil at six in the morning.
Our kitchen follows the road from Marrakech to Tunis: charcoal grills, slow tagines, preserved lemon, hand-rolled couscous and bread pulled from the oven all night. The recipes come from home cooks, not textbooks, and we keep them close.
What we changed is the room. Low light, brass, clay and long tables — a modern dining room built around an old idea: that the best meals are the ones you pass across the table.
Every spice blend is ground in-house each week. Produce is bought daily. If a dish is not right, it does not leave the pass.
